First post!
As it begins, this blog is pretty much only for me to remember some quick ideas for vegan meals, for myself as well as my family.
Looking up plant-based recipes is time-consuming. Recording the lengthy ingredient lists (whether it be writing it down, taking a screenshot, emailing then retrieving it, etc) sometimes takes just as long as the trip to the grocery store itself. I want to change that- first by just letting myself remember what the heck it was that I cooked a few weeks ago that my family really loved, and then to send some of these "recipes" to my friends in an effort to encourage them to try a healthier, more ethical diet.
Don't get me wrong, I love all of the vegan cookbooks. Oh She Glows, Thug Kitchen, and anything by the Esselstyns are always within reach, but sometimes (let's be honest- usually) I just need something quick. Working parents- amiright?
Keep in mind- I am not a gourmet chef. I know my way around the kitchen but in no way, shape, or form am I doing this to try to win a Best Recipe contest. I just want to make this way of eating easy for everyone.
